Delicious, easy and no-fuss meals are some of the most enjoyable to cook. And when they involve pasta, they’re a win in my book.
During trying times with limited access to foods, mastering some essentials of home cooking helps make dinner a bit more fun. This easy garlic and broccoli pasta tastes delicious and incorporates veggies without compromising taste. It doesn’t even require fresh broccoli!
If your pantry is limited, don’t worry. Customize this recipe to make it work for you. Substitute any shape or type of pasta. Red lentil penne works wonderfully here. Use fresh or frozen veggies. Add spinach or kale, cherry tomatoes, zucchini, mushrooms–the possibilities are endless!
This recipe requires only three steps to come together.
First, heat your pasta water. Follow package instructions for the best al dente texture.
Next, prepare your garlic and oil by–you guessed it–heating your garlic and oil! This process truly transforms the garlic and creates a delicious aroma in the kitchen.
Lastly, cook your broccoli until tender. I used about 1/2 cup of water to cook frozen broccoli, but adjust as needed. I like to add extra water because it helps combine everything in the end and adheres the garlic and oil “sauce.”
Combine everything with some salt, black pepper and red pepper flakes. I sprinkled a touch of parsley on touch for another layer of green. And you’re done!

Garlic and Broccoli Pasta
Ingredients
- 1 lb orrechiette pasta substitute any pasta of choice
- 4 tbsp olive oil
- 7 cloves garlic sliced
- 2 cups frozen broccoli
- 1/2 tsp crushed red pepper flakes optional
- salt and pepper to tast
Instructions
- Boil a large pot of water for the pasta. Cook according to package directions.
- In the meantime, pour olive oil into cold skillet and add garlic cloves to the pan. Heat over medium until the garlic has turned golden brown, about 10 minutes.
- Add 1/2 of water to a saucepan and add frozen broccoli. Cook until broccoli is very soft and cuts easily. Remove from heat and shred with forks until small bits remain.
- Combine the pasta with the garlic oil and broccoli. Add crushed red pepper flakes and salt and pepper, if desired.
- Serve hot and enjoy!
