Ice Cream Cookie Sandwiches
With Labor Day weekend officially over, I wanted to make treats to celebrate what’s left of the summer. Nothing reminds me of these warmer months more than ice cream. Combined with a classic chocolate cookie, these sandwiches are sure to be a hit!
Start by baking a batch of your favorite chocolate chip cookie. My preferred type is slightly crispy on the edge with a soft, chewy center. I use a double cookie scoop–we’re all about big cookies here.
Next, take a scoop of your favorite ice cream. Make sure it is softened, but not melty (trust me, it can get messy when runny).
I used Talenti non-dairy dark chocolate, but go for a classic vanilla if you please.
Ice cream and cookies… you just can’t go wrong.
Press that second cookie on top and squeeze slightly until the ice cream meets the edges without oozing out.
